Commuting eats your brains!

So at the end of week 3 of classes, and of me being gone almost 13 hours a day twice a week, we are finally starting to establish a routine and I am pleased to say we ate at home every night this week! I am in charge of dinner on Monday and Wednesday the roommate is in charge on Tues (from now on she and the husband are trading starting next week) and the husband on Thurs and Fri is leftovers/whatever, Saturday ditto and Sunday dinner at my folks’

This week:

Monday

Meatballs and Penne w/ salad

I totally wussed out and threw the last of some Costco frozen meatballs in the crock pot with some doctored tomato sauce. But hey I used up the meatballs! added bonus we can make meatball subs out of the leftovers/freeze them for later meatball subs.

 

Tuesday

Taco Soup/Chili in the Crockpot w/ cornbread

We buy regular canned diced tomatoes by the case at costco so we just used two of those and one small can of green chilies, next time we’ll use more tomatoes AND more chilies, very tasty but needs a little extra zest. Also we learned that “chili beans” are a product, basically pinto beans in a chipotle sauce.

Wednesday

Grilled Italian Chicken Sausage, Wilted spinach and tomatoes w/ rosemary bread from the local bakery.

The spinach and tomatoes (heirloom) were both local grown and the sausage was from Seattle! accidental local meal! Also delicious.

Thursday

Crock Pot Butter Chicken w/ rice and naan

the roommate made this and it was quite tasty but because we didn’t have the tandoori masala it wasn’t exactly like restaurant style butter chicken. We hope to try it again with all the proper spices. and also vegetables b/c this was a vegetable free night somehow!

 

So there it is, a week of foods! Forgive any typos and grammar errors please I’m exhausted and on the way to bed at 8:15PM.

Tomato Soup on a rainy day

Tonight we had my favorite soup with sandwiches. It was cooler and rainy and I love soup in rainy weather 8) (I also love rainy weather)

Pork reborn! er..recooked?… Leftovers!

Last night’s leftover pork chops became tonight’s stirfry! At first we were going to make fried rice but we had so many veggies we went for stir fry instead.

  • mushrooms (also leftover)

Now due to a miscalculation we have a lot of leftover rice X)

Annnnd we’re back!

There was a lot going on the last month or so, between organizing a baby shower for my Sister-in-law and volunteering at a major gaming convention (PAX) my month pretty much disappeared  while I wasn’t looking. Next week I start classes as a full time student, while still working part-time (although less hours) and the roommate also starts classes and a part-time job.  I am hoping blogging can keep us on track for cooking at home.

This week so far:

Monday

Tacos!

Delicious and easy, the husband made these for dinner because the roommate accompanied me on a day long quest running errands across the water (we drove around 170 miles) and we were exhausted!

Tuesday (today)

One of my favorite childhood meals:

  • Pork chops
  • Mashed potatoes
  • Gravy
  • Mixed veggies
  • Apple Sauce
  • Biscuits

I made this whole meal (with some help) just because I had a crazy craving for the milk gravy my mom always makes with this meal. Mine didn’t come out quite as good as hers but it wasn’t bad at all! Usually my family has creamed corn with this meal but I was out.

I am also experimenting with biscuits, although I can make decent biscuits I want to make FABULOUS biscuits so you might see a lot of biscuits in our menus while I work on this.

I need a recipe for leftover pork chops because they were a LOT bigger than I thought they were when I bought the package. We also have leftover mashed potatoes which I think I will turn into soup and freeze.

I’m thinking about making zucchini AND carrot bread sicne i have some of each I need to use up 8)  trying to decide if i should do separate loaves or combine them…. hrrrrm.. carrot bread with pecans would be good i think!

Meat flavored carrots!

Hi there! It turns out I actually was not better last week and in fact developed a sinus infection and missed two days of work and was miserable. It was awesome.

I AM mostly better now!

Tonight we had pot roast. I love pot roast because it is easy it is good and it has meat flavored carrots (also potatoes) and we had some really nice teeny carrots from our organic produce box! They were all 6 inches-ish and very flavorful even before they became meat flavored. Any recipe that is basically “throw ingredients in container, heat until done” and turns out amazing every time is pretty OK in my book!

Enough for a lunch or two and some kind of recycled pot roast meal tomorrow!

Should haves

Should have been stronger and not distracted by meat flavored carrots and made some green beans or something X)

Been sick

I’ve been sick. this means we have been eating what the husband and the roommate cook. We’ve had um…nachos, they had chili dogs which I could not bring myself to eat that day I felt so awful, grilled sausages and spinach one night and last night we had Jack in the Box. It took me forever to figure out what we had, I’ve been so out of it. Oh and last Thursday my grandmother was in town and my parents invited us all to OG (Olive Garden). I have seriously been sleeping when I am not at work or sitting on IRC like a zombie. I stayed home from work today and slept forever and feel much better!

In fact I am making banana bread right now, before I go to bed. Why are you making banana bread at 11PM you ask? So I can take it with me tomorrow when we go see Great Big Sea at the zoo! Also because my bananas were at the perfect stage of overripe. But I am really tired and want to go to bed.

Sorry about the week o’ nothing!

Monday night we ate out *gasp* at a not particularly good nor bad new restaurant in town, it’s only been open about 2 weeks though so we may try it again in the future.

Tuesday dinner was delicious!

Mostly Grilled Chicken (with garlic rub)

Tomatoes and Mozzerella melted on french bread w/ a little pesto

Some salad and one of the delicious tomato breads were leftover, someone may have taken it for lunch, if not I may have it as a snack!

Should haves

I should have checked the propane bottle! I ran out 1/2 way through grilling and had to finish stuff in the broiler.
